Simple, Healthy Cauliflower Crust Pizza

Who doesn't love pizza? If I could, I would probably eat it every day. :)  Here is a fun, quick and easy way to eat pizza without the guilt, simply by swapping out traditional crust for a cauliflower crust - promise, you can’t even tell the difference!

First, go to Trader Joe's and buy the pre-made cauliflower pizza crust. It’s in the same section as the frozen pizzas. And follow the cooking directions on the back of the box for the crust.

While that is cooking in the oven make your toppings ! Today mine had tomatoes, mushrooms, ricotta cheese and micro green. So I need to reduce the tomatoes and sauté the mushrooms. I dumped a box of chopped tomatoes into a pot and set it to high. I like to reduce them for a thinker constancy. I don't want a lot of liquid because it will make the crust soggy.

Then I chopped up some shiitake mushrooms and sautéed them in olive oil. When cooking with olive oil never go above medium temperature, you don't want to have the oil smoke.

Once the crust is done it will have a nice golden color to it!

Before I put my greens on I like to put the pizza in the oven on broil. This will help heat up the cheese so everything is warm. I only put it in there for 2-4 mins.

Voilà! Your final product is tasty, healthy and easy to make! Oh, and the kiddo's like it too :)
