Simple, Healthy Meatball Recipe

I love meatballs, especially during the winter time when I seem to crave comfort food more often. This is my favorite meatball recipe lately, and it’s surprisingly easy to make! I like to keep the ingredients clean, healthy and pretty simple - as a busy mom, now with two under two, and a business to run, I’m always looking for ways to simplify the meal planning process!

All you need is chopped vegetables, pre-made sausage, eggs, and bread crumbs. Using the pre-made sausage helps cut down on the amount of ingredients and prep time, plus, it’s already perfectly seasoned, which is a huge bonus! Another one of my favorites is the pre-cut, mixed vegetable medley from Gelson’s. I typically keep fresh chopped veggies in the fridge, ready to go, so I can easily bulk up any meal on the fly!

First things first, preheat your oven to 350 while you prep the meatballs. After finely chopping your vegetables, you can quickly sautee them. Be sure to use high quality oils, and when cooking with olive oil, never cook higher than medium heat.

Pro Tip for moms: If your kid is like mine, and isn’t into vegetables at the moment, I’ve figured out the perfect way to “hide” veggies in all the foods he loves! I toss the veggies into our food processor after sauteeing so that they’re so finely chopped, he won’t even notice ;)

*I’ve found this also works for pasts sauces, and a ton of other meals - don’t be afraid to experiment a bit and get creative with your cover up!

Now, simply transfer the veggies into a mixing bowl and add eggs. Next up, take the pre-made sausage out of the casing and place it in the bowl.

Now, add in your bread crumbs. After mixing the ingredients with your hands, roll them into balls and place them on a baking sheet. By now, the oven should be preheated, so you can throw them in the oven and set a timer for 30 minutes until fully cooked. The really nice thing about these meatballs, is that you can always make a large batch and stick them in the freezer for later. They’re just as good reheated!

Ingredients:

-Finely chopped veggies

-4 organic eggs

-6 sausages (I usually use chicken or turkey from our local butcher. Make sure to take the meat out of the casing!)

-Bread crumbs (You can use regular, seasoned, or gluten free. Use whatever works best for you!)

-Olive Oil (for sauteeing the vegetables)


Recipe:

-Preheat your oven to 375 degrees Fahrenheit

-Finely chop and sautee the vegetables

-Throw sauteed veggies in the food processor for further refinement (you can always skip this step if you’re not trying to hide them, or even if you just prefer larger bits of vegetables in your meatballs)

-Combine all of the ingredients into one bowl, make them into balls, place them on a cooking sheet

-Cook in the oven at 375 degrees Fahrenheit for 30 minutes
