Easy Dinner Recipes

Now you all know that I love cooking it up in the kitchen, but sometimes being a busy mom, and business owner, easy dinners are the best kinds! I’ve gathered together a few new recipes that are both delicious and easy! Check them out:

A BBQ Tofu Dinner is just the thing for summer – or anytime when you want a quick dinner and some outdoor eating. It's perfect company food - everyone loves it! The best part about this meal is that you can get everything done in about an hour, which makes it perfect for busy days or days when you don't want to slave over a hot smoker.

BBQ Tofu- An amazing twist on Korean BBQ!
What You’ll Need:

  • 3 tbsp. soy sauce

  • 1 tbsp. rice vinegar

  • 3 cloves garlic (minced fine and crushed)

  • 2 tbsp. sugar-free ketchup (hoisin sauce or barbecue sauce)

  • 1 tbsp. maple syrup

  • 2 tsp. hot sauce (or to taste, I used fermented hot sauce)

  • Tofu

Think of it as cooking regular BBQ! Just mix them all together and you gotcha some vegan BBQ! (if you don’t have a BBQ an air fryer works too!)

Spinach is one of the healthiest leafy greens available. Not only does it deliver a massive dose of Vitamin A, but it’s also rich in antioxidants and known to prevent cancer. I love the taste of spinach on its own and cooked spinach is even better! 

Spinach & Tomato Pasta - Such a super quick and easy dinner to make whenever you want something fast.

What You’ll Need:

  • Any Pasta (I like ZenB yellow pea pasta)

  • Olive Oil

  • Garlic

  • Sea Salt

  • Grape Tomatoes

  • Pepper.

First, you should put olive oil in the pan, and add your tomatoes and cover with a lid. They will burst open and give you an amazing sauce! Then add your seasoning and spinach. When everything is cooked, you add your cooked pasta to the pot and mix it all together! I like to top mine with cheese!

Summer is about to be in full swing! You know what that means… summer fruits and veggies. Take advantage of the wonderful fruits and vegetables we have this season such as zucchini! It’s light, fresh and full of health benefits. Add it to your next dish to make it light and fresh for summer!

Zucchanoush - A delicious summer squash with a twist!

What You’ll Need:

  • Zucchini 

  • Olive Oil

  • Salt & Pepper

  • Garlic Clove

  • Tahini

  • Lemon Juice

  • Mint Leaves

  • Pine Nuts

1. Cook zucchini with oil and salt and grill until tender and evenly charred, 8 to 10 minutes.


2. Put zucchini in a blender along with garlic, tahini, lemon juice, and mint and pulse to combine. Drizzle in olive oil and puree until mostly smooth, increasing blender speed if necessary.


3. Chop remaining mint. Serve zucchini mixture topped with mint and pine nuts.


These recipes are some of my favorites. I've tried each and everyone, and trust me they are delicious. They will surely be a pleaser to your family and friends. These are perfect recipes for those long summer nights coming up!
